Start with a beginner’s mind, even if you are an experienced cook. You want a fresh start. Since health goals have priority, complex food mixtures and spicing are considered undesirable in Phase 1 recipes. Many people have found that simple meals can look and taste delicious. A simple appreciation of basic foods can increase your pleasure in cooking and eating. The secret of delicious food is hunger. If you are very hungry and thirsty, a bowl of white rice and a glass of water can be the most delicious foods you have ever consumed. People have approached Phase 1 cooking from surprising divergent backgrounds. Couples with lavishly appointed designer kitchens have cleared their refrigerator of indulgent and exotic foods, closed the wine cupboard, and set aside the majority of their spices, utensils, and all their cookbooks to do very well on the Alpha Nutrition Program. You may have to reorganize your kitchen. After you have discarded, given away or put away foods that are excluded in the program, make a shopping list for Phase 1 foods and stock up on them. Create a spot for your records - a wallboard for posting food-lists and reminders is helpful. You will need to keep a daily food-symptom journal; this is your laboratory notebook, essential to your personal investigation of your food tolerances.
